''Bukkumi'' (hangul: 부꾸미) is a traditional Korean cuisine, made by kneading glutinous rice flour, flour, or sorghum flour and frying it on a griddle. Sometimes it contains a paste made of chestnuts, jujubes, azuki beans or so on. It is referred to as ''bukkumi'', or ''heodeuretteok'' (hangul: 허드레떡) in Jeolla, ''bindaetteok'' (hangul: 빈대떡) in Seoul, ''jijimi'' (hangul: 지짐이) in Pyongan, and ''makbuchi'' (hangul: 막부치) in Hwanghae. Jeolla's flour ''bukkumi'' in particular is considered a delicacy during midsummer heat.
