CHY-MAX is Genetically Engineered bovine chymosin produced by the biotech company Chr. Hansen A/S. CHY-MAX is produced by fermentation of the fungus ''Aspergillus niger''. Bovine chymosin is an enzyme that causes milk to curdle.
