Enyucado Enyucado is a Colombian cuisine cassava cake dessert.〔()〕 It is made with ground boiled yuca, anise, sugar, and sometimes guava jam. Enyucado is from the Caribbean region of Colombia. In this area cassava is also eaten roasted, fried or boiled. It is sometimes served with soft homemade cheese (Costeño cheese), cream cheese, or suero; usually as a garnish of fish dishes such as arroz de lisa. In Costa Rican cuisine an enyucado is a fried cassava croquette generally filled with ground meat, cheese, or vegetables. ==See also==
