Han-u (한우 in Korean, also Hanu, Hanwoo, or Korean native cattle) refers to a breed of cattle raised in Korea, ''Bos taurus coreanae'', which may be a hybrid derived from the cross-breeding of (''Bos taurus'') and (''Bos indicus'').〔(A Comparison of the Meat Qualities from the Hanwoo (Korean Native Cattle) and Holstein Steer ), Sun Jin Hur, Gu Boo Park and Seon Tea Joo, ''Food and Bioprocess Technology'', Springer New York, ISSN 1935-5130, Issue Volume 1, Number 2 / June, 2008, pp 196-200〕 Its maternal lineage is taurine (European-type) cattle.〔(Identification of genetic polymorphisms in bovine mtDNA ), EunHee Kim, Hyun Sub Cheong, Joon Seol Bae, Ji-Yong Chun, Tae Joon Park, KyoungKap Lee, YoungMin Yun and Hyoung Doo Shin, ''Journal of Animal Science'', April 23, 2010〕 Its meat is a favorite in South Korea. Despite its high price, many Koreans prefer Han-u to cheaper imported beef as the former is regarded as fresher and of better quality. One paper noted, "Hanwoo is regarded as a premium beef because of its high palatability and desired chewiness".〔Early postmortem processing conditions on meat quality of Hanwoo (Korean Native Cattle) beef during storage., B.C. Kim, M.S. Rhee, Y.C. Ryu, J.Y. Imm, and K.C. Koh, ''Asian-Aust. J. Anim. Sci.'', Vol. 14(7), 2001, pp 1763-1768.〕 Since Koreans consider Han-u beef a cultural icon and one of the top-quality beefs of the world, it is used in traditional foods, popular holiday dishes, or as a special-day gift.〔 The county of Hoengseong is best known for its Han-u cattle, where the environment is well-suited for cattle farming. The county began a strategic marketing campaign in 1995 to brand itself as the origin of the highest quality beef in Korea.〔http://www.hansik.org/zh/restaurant/recommendRestaurantView.do?fboardId=1063〕 ==See also== *Korean cuisine 抄文引用元・出典: フリー百科事典『 ウィキペディア(Wikipedia)』 ■ウィキペディアで「Han-u」の詳細全文を読む スポンサード リンク
