Ikameshi
is a Japanese dish composed of squid cooked with rice inside. It is a regional dish from the Oshima area of Hokkaidō. ==Preparation== Ikameshi is prepared by removing tentacles from and gutting the squid, which is then stuffed with washed rice and cooked in dashi. Toothpicks and other such items may be used to keep the rice in place. The rice itself is usually a blend of both glutinous and non-glutinous rice.〔西尾芳博「イカめし」,『日本の郷土料理』1巻(北海道・東北I),ぎょうせい,1986年,76頁.〕 Other ingredients sometimes used as stuffing: minced squid tentacles, bamboo shoots, carrots, aburaage.〔益田喜頓「鰊・鰯・烏賊・・・生地の味が一番」、『日本の郷土料理』1巻(北海道・東北I)、ぎょうせい、1986年、23頁。〕〔
