Spirgai
Spirgai (also spirgučiai ("little spirgai"); from Lithuanian ''spirginti'', "to fry with a frizzling sound"), or cracklings, is a Lithuanian national garnish: small bits of fried ''lašiniai'' (non-rendered pork underskin fat with little or no meat, known in Russian and Ukrainian as salo). ''Spirgai'' is often used as a garnish for cepelinai and kugelis, popular Lithuanian national dishes. lt:Spirgai
