Tocană, also known as shepherd's stew, is a Romanian stew prepared with tomato, garlic and sweet paprika.〔(The Old World Kitchen: The Rich Tradition of European Peasant Cooking - Elisabeth Luard ). pp. 517-518.〕〔(Please to the Table: The Russian Cookbook - Anya Von Bremzen, John Welchman ). pp. 311-312.〕 Traditionally, it is consumed with a cornmeal mush named ''mămăligă''.〔 The dish has a history of being consumed by shepherds in the Romanian mountains.〔(The Multicultural Cookbook for Students - Carole Lisa Albyn ). p. 97.〕 Derived from the Hungarian ''tokány'',〔 (Tocană ) in ''Dicționarul explicativ al limbii române''〕 the term is sometimes rendered as "tokana" in English.
